Assessment of Eight Principles of Total Quality Management in Food Stalls : A Case Study of Modern Katuga in Cambaog, Bustos Bulacan, Philippines

The sale of street food has provided financial opportunities for local entrepreneurs. However, the extensive availability of street meals has become a significant public health concern. This study was conducted to tackle the evaluation regarding principles of total quality management and to assess the situation of street food vending in Modern Katuga in Cambaog, Bustos, Bulacan, Philippines. Using face-to-face observation, a total of 7 employees were observed and interviewed. The observation made it appear that some of the food stalls inside the Modern katuga did not pass some of the principles of TQM. Some of the problems they are facing are lack of employees, poor service, lack of strategy, etc. In view of this, the study recommended to make programs available to staff who have to learn new skills and to evaluate and understand the customers' needs and expectations
