This study was carried out in Bursa Uludag University Yenişehir Ibrahim Orhan Vocational School Research Area between 2014 and 2015 in order to determine the effects of four different irrigation levels and three different fertilization levels on yield and quality parameters of artichoke grown open field conditions. In both study years, applied water and evapotranspiration values were measured as 120-480 mm, 160-530 mm and 125-500 mm, 160-555 mm, respectively. It has been observed that the yield and some physical quality parameters (head length, head diameter, principal head weight, secondary head weight, number of heads per plant and dry matter of artichokes. The highest yield average for both years was obtained from T1F1.00 treatment and was found to be 48.6 and 50.2 t ha-1 in 2014 and 2015, respectively. Crop response factors (ky) of artichoke were found as 0.82-0.98-0.80 and 0.83-0.91-0.74 in 2014 and 2015, respectively. Carbohydrate, protein, fat, fiber, vitamin C, vitamin K, vitamin A, folat, phenolic compounds, phosphorus (P), potassium (K), calcium (Ca), magnesium (Mg), iron (Fe), zinc (Zn) and copper (Cu) ratios in fruits were determined according to different irrigation and fertigation levels. When the effects of different irrigation and fertigation levels on the yield and quality parameters of artichoke are evaluated, it can be considered that T2F1.00 and T2F0.75 treatments are the most appropriate options.
